Ingredients
- 2 tbsp olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 carrot, grated
- 1 celery stalk, finely chopped
- 1 red bell pepper, diced
- 1 can (28 oz) crushed tomatoes
- 1 tbsp tomato paste
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup fresh parsley, chopped
- 1/4 cup water (if needed)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until soft (3-4 minutes).
- Stir in carrot, celery, and bell pepper. Cook for 5 minutes.
- Add crushed tomatoes, tomato paste, oregano, basil, salt, and pepper. Mix well.
- Simmer uncovered for 20-25 minutes, stirring occasionally.
- If sauce thickens too much, add water as needed.
- Stir in fresh parsley before serving.
