A healthy and flavorful keto-friendly casserole inspired by jalapeño poppers. Perfect for a festive Christmas meal.
Ingredients
- 6 large jalapeños, seeded and diced
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/2 cup mayonnaise
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- 1/4 cup almond flour
- 1 tbsp butter, melted
Instructions
- Preheat oven to 375°F (190°C). Grease a baking dish.
- In a bowl, mix cream cheese, cheddar cheese, bacon, mayonnaise, garlic powder, onion powder, salt, and pepper.
- Fold in diced jalapeños and spread the mixture into the baking dish.
- In a small bowl, combine almond flour and melted butter. Sprinkle over the casserole.
- Bake for 20-25 minutes until golden and bubbly.
- Let cool slightly before serving.
Notes
- Wear gloves when handling jalapeños to avoid skin irritation.
- Adjust jalapeño quantity based on desired spiciness.
- Store leftovers in an airtight container for up to 3 days.
