Description

A healthy and flavorful keto-friendly casserole inspired by jalapeño poppers. Perfect for a festive Christmas meal.


Ingredients

  • 6 large jalapeños, seeded and diced
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/2 cup mayonnaise
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 1/4 cup almond flour
  • 1 tbsp butter, melted


Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. In a bowl, mix cream cheese, cheddar cheese, bacon, mayonnaise, garlic powder, onion powder, salt, and pepper.
  3. Fold in diced jalapeños and spread the mixture into the baking dish.
  4. In a small bowl, combine almond flour and melted butter. Sprinkle over the casserole.
  5. Bake for 20-25 minutes until golden and bubbly.
  6. Let cool slightly before serving.
