Description
A hearty and healthy soup perfect for Christmas, featuring kielbasa and potatoes.
Ingredients
- 1 lb kielbasa, sliced
- 4 cups potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup milk
- 1 tsp black pepper
- 1 tsp salt
- 2 tbsp olive oil
- 1 tsp thyme
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions and garlic, sauté until soft.
- Add sliced kielbasa and cook until browned.
- Stir in diced potatoes and cook for 5 minutes.
- Pour in chicken broth and bring to a boil.
- Reduce heat and simmer until potatoes are tender.
- Add milk, salt, pepper, and thyme.
- Simmer for 10 more minutes.
- Serve hot.
