Ingredients
- 2 cups low-sodium beef broth
- 1 cup sauerkraut, drained
- 1 cup shredded cooked turkey or chicken
- 1/2 cup diced Swiss cheese
- 1/4 cup plain Greek yogurt
- 1 tablespoon Dijon mustard
- 1 teaspoon caraway seeds
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 small onion, diced
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and cook until softened, about 3 minutes.
- Stir in sauerkraut, caraway seeds, garlic powder, and black pepper. Cook for 2 minutes.
- Pour in beef broth and bring to a simmer.
- Add shredded turkey or chicken and let simmer for 5 minutes.
- Reduce heat to low and stir in Greek yogurt and Dijon mustard.
- Top with shredded Swiss cheese before serving.
