Ingredients
- 1 cup chickpeas, drained and rinsed
- 2 cups mixed vegetables (carrots, Brussels sprouts, sweet potatoes)
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup tahini
- 1 tbsp maple syrup
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
- 2 tbsp water
Instructions
- Preheat oven to 400°F (200°C).
- Toss chickpeas and vegetables with olive oil, salt, and pepper.
- Spread on a baking sheet and roast for 25-30 minutes.
- Whisk tahini, maple syrup, Dijon mustard, lemon juice, and water in a bowl.
- Drizzle dressing over roasted veggies and chickpeas.
- Serve warm.
