Description
A fresh and festive spinach pasta salad with feta cheese and cranberries, perfect for a healthy Christmas meal.
Ingredients
- 8 oz whole wheat pasta
- 4 cups fresh spinach
- 1/2 cup crumbled feta cheese
- 1/3 cup dried cranberries
- 1/4 cup chopped walnuts
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp honey
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Cook pasta according to package instructions. Drain and let cool.
- In a large bowl, combine spinach, feta, cranberries, and walnuts.
- Add the cooled pasta to the bowl.
- In a small bowl, whisk olive oil, balsamic vinegar, honey, salt, and pepper.
- Pour the dressing over the salad and toss gently.
- Serve chilled.
Notes
- You can use any pasta shape you prefer.
- Add grilled chicken for extra protein.
