A healthy twist on the classic churro flavor, this Chex mix is crunchy, sweet, and perfect for snacking.
Ingredients
- 4 cups Rice Chex cereal
- 2 tbsp coconut oil
- 2 tbsp honey
- 1 tsp cinnamon
- 1/4 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat oven to 250°F (120°C).
- In a large bowl, combine Rice Chex cereal with coconut oil, honey, cinnamon, vanilla extract, and salt.
- Toss until evenly coated.
- Spread the mixture on a baking sheet lined with parchment paper.
- Bake for 45 minutes, stirring every 15 minutes.
- Let cool before serving.
Notes
- Store in an airtight container for up to a week.
- For extra crunch, bake for an additional 10 minutes.
- Substitute maple syrup for honey if preferred.
