Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 lime, juiced
  • 1/4 cup chopped cilantro
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 cup cooked quinoa or rice
  • 1 peach, diced
  • 1/4 red onion, finely chopped
  • 1/2 jalapeño, seeded and minced
  • 1 tbsp lime juice
  • 1 tbsp chopped mint


Instructions

  1. Preheat grill or skillet to medium-high heat.
  2. Mix olive oil, lime juice, cilantro, garlic powder, cumin, salt, and pepper in a bowl.
  3. Coat chicken with the marinade and let sit for 10 minutes.
  4. Grill or cook chicken for 6-7 minutes per side until fully cooked.
  5. Let chicken rest for 5 minutes, then slice.
  6. Combine peach, red onion, jalapeño, lime juice, and mint in a bowl for salsa.
  7. Serve chicken over quinoa or rice and top with peach salsa.
