Ingredients
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 lime, juiced
- 1/4 cup chopped cilantro
- 1 tsp garlic powder
- 1 tsp cumin
- Salt and pepper to taste
- 1 cup cooked quinoa or rice
- 1 peach, diced
- 1/4 red onion, finely chopped
- 1/2 jalapeño, seeded and minced
- 1 tbsp lime juice
- 1 tbsp chopped mint
Instructions
- Preheat grill or skillet to medium-high heat.
- Mix olive oil, lime juice, cilantro, garlic powder, cumin, salt, and pepper in a bowl.
- Coat chicken with the marinade and let sit for 10 minutes.
- Grill or cook chicken for 6-7 minutes per side until fully cooked.
- Let chicken rest for 5 minutes, then slice.
- Combine peach, red onion, jalapeño, lime juice, and mint in a bowl for salsa.
- Serve chicken over quinoa or rice and top with peach salsa.
Notes
- For extra flavor, marinate chicken for up to 2 hours.
- Substitute mango for peach if preferred.
- Use brown rice or cauliflower rice for a lower-carb option.
