A healthy twist on classic lasagna packed with nutritious ingredients.
Ingredients
- 9 lasagna noodles
- 1 lb lean ground turkey
- 1 onion, diced
- 3 garlic cloves, minced
- 24 oz marinara sauce
- 15 oz ricotta cheese
- 1 egg
- 2 cups spinach, chopped
- 2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 375°F.
- Cook lasagna noodles according to package directions.
- Brown turkey with onion and garlic in a skillet.
- Stir in marinara sauce and simmer for 5 minutes.
- Mix ricotta, egg, spinach, Parmesan, and seasonings.
- Layer noodles, meat sauce, and cheese mixture in baking dish.
- Repeat layers, ending with mozzarella on top.
- Cover with foil and bake for 25 minutes.
- Remove foil and bake for 15 more minutes.
- Let stand for 10 minutes before serving.
Notes
- Use whole wheat noodles for extra fiber.
- Replace turkey with mushrooms for vegetarian option.
- Freezes well for up to 3 months.
