Description

A creamy and nutritious roasted butternut soup, perfect for a cozy meal.


Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp ground cumin
  • 1/4 tsp nutmeg
  • 1/2 cup coconut milk (optional)


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss cubed butternut squash with olive oil, salt, and pepper. Roast for 30 minutes.
  3. In a pot, sauté onion and garlic until soft.
  4. Add roasted butternut, vegetable broth, cumin, and nutmeg. Simmer for 15 minutes.
  5. Blend until smooth. Stir in coconut milk if using.
  6. Adjust seasoning and serve warm.

Notes

  • For extra flavor, add a pinch of cayenne pepper.
  • Store leftovers in the fridge for up to 3 days.
