Ingredients
- 2 cups cooked black-eyed peas
- 1 cup chopped celery
- 1/2 cup diced red onion
- 1/2 cup diced bell pepper
- 1/4 cup chopped fresh parsley
- 1/4 cup olive oil
- 2 tbsp apple cider vinegar
- 1 tsp Dijon mustard
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- In a large bowl, combine black-eyed peas, celery, red onion, bell pepper, and parsley.
- In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, salt, and pepper.
- Pour the dressing over the salad and toss gently to coat.
- Cover and refrigerate for at least 1 hour before serving.
