Description
A healthy classic split pea soup made without ham, perfect for a nutritious and hearty meal.
Ingredients
- 1 cup dried split peas, rinsed
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 cups water
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Rinse the split peas and set aside.
- In a large pot, sauté onion, carrots, celery, and garlic until softened.
- Add split peas, vegetable broth, water, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 45-50 minutes until peas are tender.
- Remove bay leaf and season with salt and pepper.
- Blend half the soup if a smoother consistency is desired.
Notes
- Store leftovers in an airtight container for up to 3 days.
- Freeze for longer storage.
- Add extra water if soup thickens too much.
