Description

A healthy classic split pea soup made without ham, perfect for a nutritious and hearty meal.


Ingredients

  • 1 cup dried split peas, rinsed
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups water
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste


Instructions

  1. Rinse the split peas and set aside.
  2. In a large pot, sauté onion, carrots, celery, and garlic until softened.
  3. Add split peas, vegetable broth, water, thyme, and bay leaf.
  4. Bring to a boil, then reduce heat and simmer for 45-50 minutes until peas are tender.
  5. Remove bay leaf and season with salt and pepper.
  6. Blend half the soup if a smoother consistency is desired.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • Freeze for longer storage.
