Ingredients

  • 2 cups whole-grain pasta
  • 1 cup cooked chicken breast, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cooked bacon, crumbled
  • 1/4 cup shredded cheddar cheese
  • 2 tbsp low-fat mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 2 cups mixed greens


Instructions

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooled pasta, chicken, cherry tomatoes, cucumber, red onion, bacon, and cheddar cheese.
  3. In a small bowl, whisk together mayonnaise, Dijon mustard, lemon juice, salt, and pepper.
