Ingredients
- 6 hard-boiled eggs, chopped
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup cooked chicken breast, diced
- 1/4 cup crumbled blue cheese
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Chop the hard-boiled eggs and place them in a large bowl.
- Add diced avocado, halved cherry tomatoes, and diced chicken breast.
- Sprinkle crumbled blue cheese over the mixture.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
