Ingredients
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- Salt and pepper to taste
- 4 cups mixed greens
- 1 avocado, sliced
- 2 hard-boiled eggs, chopped
- 1/2 cup cherry tomatoes, halved
- 1/4 cup crumbled blue cheese
- 2 slices cooked bacon, chopped
- 1/4 cup red onion, thinly sliced
- 1/4 cup balsamic vinaigrette
Instructions
- Preheat grill to medium-high heat. Brush chicken with olive oil and season with salt and pepper.
- Grill chicken for 6-7 minutes per side until fully cooked. Let rest, then slice.
- Arrange mixed greens on a large plate or bowl.
- Top with sliced chicken, avocado, eggs, tomatoes, blue cheese, bacon, and red onion.
- Drizzle with balsamic vinaigrette and serve immediately.
