A warm and comforting bowl packed with healthy carbs to keep you satisfied during cold weather.
Ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1 sweet potato, diced
- 1 cup kale, chopped
- 1/2 cup chickpeas, drained and rinsed
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- Cook quinoa in vegetable broth according to package instructions.
- Preheat oven to 400°F. Toss sweet potato with olive oil, garlic powder, paprika, salt, and pepper.
- Roast sweet potato for 20 minutes or until tender.
- Sauté kale in a pan until wilted.
- Combine quinoa, roasted sweet potato, kale, and chickpeas in a bowl.
- Serve warm.
Notes
- Store leftovers in an airtight container for up to 3 days.
- Add avocado for extra creaminess.
- Substitute chickpeas with black beans if preferred.
