Description

Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 sweet potato, diced
  • 1 cup kale, chopped
  • 1/2 cup chickpeas, drained and rinsed
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and pepper to taste


Instructions

  1. Rinse quinoa under cold water.
  2. Cook quinoa in vegetable broth according to package instructions.
  3. Preheat oven to 400°F. Toss sweet potato with olive oil, garlic powder, paprika, salt, and pepper.
  4. Roast sweet potato for 20 minutes or until tender.
  5. Sauté kale in a pan until wilted.
  6. Combine quinoa, roasted sweet potato, kale, and chickpeas in a bowl.
  7. Serve warm.
