Description
A comforting and healthy chicken and noodles dish made in a crock pot. Perfect for a hearty meal with minimal effort.
Ingredients
- 2 lbs boneless, skinless chicken breasts
- 4 cups low-sodium chicken broth
- 2 cups water
- 3 carrots, sliced
- 2 celery stalks, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 8 oz whole wheat egg noodles
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1/2 tsp black pepper
- 1/2 tsp salt
Instructions
- Place chicken, broth, water, carrots, celery, onion, garlic, thyme, parsley, pepper, and salt in the crock pot.
- Cover and cook on low for 6 hours or high for 3 hours.
- Remove chicken and shred with two forks. Return to the pot.
- Add egg noodles, cover, and cook on high for 20-30 minutes until noodles are tender.
- Serve hot.
Notes
- Use whole wheat noodles for extra fiber.
- Adjust seasoning to taste.
- Store leftovers in the fridge for up to 3 days.
