Description

A comforting and healthy chicken and noodles dish made in a crock pot. Perfect for a hearty meal with minimal effort.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 4 cups low-sodium chicken broth
  • 2 cups water
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 8 oz whole wheat egg noodles
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1/2 tsp black pepper
  • 1/2 tsp salt


Instructions

  1. Place chicken, broth, water, carrots, celery, onion, garlic, thyme, parsley, pepper, and salt in the crock pot.
  2. Cover and cook on low for 6 hours or high for 3 hours.
  3. Remove chicken and shred with two forks. Return to the pot.
  4. Add egg noodles, cover, and cook on high for 20-30 minutes until noodles are tender.
  5. Serve hot.

Notes

  • Use whole wheat noodles for extra fiber.
  • Adjust seasoning to taste.
