Ingredients
- 2 cups fresh corn kernels
- 1 cup low-fat milk
- 1 egg, beaten
- 1/4 cup whole wheat flour
- 1/4 cup grated Parmesan cheese
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix corn, milk, egg, and olive oil.
- Stir in flour, Parmesan cheese, salt, and pepper.
- Pour the mixture into a greased baking dish.
- Bake for 30-35 minutes or until set and lightly golden.
Notes
- You can use frozen corn if fresh is unavailable.
- For extra flavor, add a pinch of paprika or chopped herbs.
