Description

A healthy twist on the classic Alfredo pasta, using cottage cheese for a protein-packed, creamy texture.


Ingredients

  • 2 cups cottage cheese
  • 1 cup milk
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 oz whole wheat pasta
  • 1 cup broccoli florets
  • 1/2 cup cherry tomatoes, halved


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook pasta according to package instructions, adding broccoli in the last 2 minutes. Drain.
  3. Blend cottage cheese, milk, Parmesan, garlic, salt, and pepper until smooth.
  4. Mix sauce with cooked pasta and broccoli.
  5. Transfer to a baking dish and top with cherry tomatoes.
  6. Bake for 20 minutes until bubbly.
  7. Serve warm.

Notes

  • Substitute any vegetables as preferred.
