Description
A healthy twist on loaded baked potatoes using cottage cheese for added protein and creaminess.
Ingredients
- 2 large russet potatoes
- 1 cup cottage cheese
- 1/4 cup shredded cheddar cheese
- 2 tbsp chopped green onions
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Wash and dry the potatoes, then prick them with a fork.
- Rub the potatoes with olive oil and sprinkle with salt.
- Bake for 45-60 minutes until tender.
- Cut a slit in the top of each potato and fluff the insides with a fork.
- Top with cottage cheese, cheddar cheese, and green onions.
- Return to the oven for 5 minutes to melt the cheese.
- Serve warm.

- Use low-fat cottage cheese for a lighter option.
- Add cooked bacon or diced tomatoes for extra flavor.
