Ingredients

  • 8 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups vegetable broth
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 cups whole wheat bread, cubed
  • 1/4 cup fresh parsley, chopped


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add garlic, onion, carrots, and celery. Sauté for 5 minutes.
  3. Pour in vegetable broth and add thyme, bay leaf, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Add bread cubes and cook for another 5 minutes until softened.
  6. Remove bay leaf and garnish with fresh parsley before serving.
