Ingredients
- 8 cloves garlic, minced
- 2 tbsp olive oil
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups vegetable broth
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 cups whole wheat bread, cubed
- 1/4 cup fresh parsley, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add garlic, onion, carrots, and celery. Sauté for 5 minutes.
- Pour in vegetable broth and add thyme, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add bread cubes and cook for another 5 minutes until softened.
- Remove bay leaf and garnish with fresh parsley before serving.
