Ingredients
- 1 can black beans (15 oz), drained and rinsed
- 1 can corn (15 oz), drained
- 1 red bell pepper, diced
- 1 avocado, diced
- 1/4 cup cilantro, chopped
- 2 tbsp lime juice
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- In a large bowl, combine black beans, corn, and diced red bell pepper.
- Gently fold in diced avocado and chopped cilantro.
- Drizzle lime juice over the mixture.
- Sprinkle salt and black pepper, then toss lightly.
- Chill for 30 minutes before serving.
Notes
- Add jalapeños for extra spice.
- Serve with tortilla chips or as a side salad.
- Best eaten fresh but can be stored in the fridge for up to 2 days.
