Description

A comforting lasagna packed with healthy ingredients for a cozy dinner.


Ingredients

  • 9 lasagna noodles
  • 1 lb lean ground turkey
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 jar (24 oz) marinara sauce
  • 1 cup low-fat ricotta cheese
  • 1 egg
  • 1 cup spinach, chopped
  • 1 cup shredded part-skim mozzarella
  • 1/4 cup grated Parmesan
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F.
  2. Boil lasagna noodles until al dente. Drain and set aside.
  3. Brown turkey with onion and garlic in a pan. Add marinara sauce and simmer.
  4. Mix ricotta, egg, spinach, oregano, basil, salt, and pepper in a bowl.
  5. Spread a thin layer of meat sauce in a baking dish.
  6. Layer 3 noodles, half the ricotta mixture, and 1/3 of the mozzarella.
  7. Repeat layers, ending with meat sauce and remaining mozzarella and Parmesan.
  8. Bake covered for 25 minutes, then uncovered for 15 minutes.
  9. Let rest 10 minutes before serving.

Notes

  • Substitute ground chicken for turkey if preferred.
  • Use gluten-free noodles if needed.
  • Add zucchini slices for extra vegetables.
