A comforting lasagna packed with healthy ingredients for a cozy dinner.
Ingredients
- 9 lasagna noodles
- 1 lb lean ground turkey
- 1 onion, diced
- 2 cloves garlic, minced
- 1 jar (24 oz) marinara sauce
- 1 cup low-fat ricotta cheese
- 1 egg
- 1 cup spinach, chopped
- 1 cup shredded part-skim mozzarella
- 1/4 cup grated Parmesan
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F.
- Boil lasagna noodles until al dente. Drain and set aside.
- Brown turkey with onion and garlic in a pan. Add marinara sauce and simmer.
- Mix ricotta, egg, spinach, oregano, basil, salt, and pepper in a bowl.
- Spread a thin layer of meat sauce in a baking dish.
- Layer 3 noodles, half the ricotta mixture, and 1/3 of the mozzarella.
- Repeat layers, ending with meat sauce and remaining mozzarella and Parmesan.
- Bake covered for 25 minutes, then uncovered for 15 minutes.
- Let rest 10 minutes before serving.
Notes
- Substitute ground chicken for turkey if preferred.
- Use gluten-free noodles if needed.
- Add zucchini slices for extra vegetables.
