Healthy bakery-style muffins packed with cranberries and pistachios for a nutritious and delicious treat.
Ingredients
- 1 1/2 cups whole wheat flour
- 1/2 cup rolled oats
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup honey
- 1/3 cup unsweetened applesauce
- 1/4 cup olive oil
- 1 egg
- 1 tsp vanilla extract
- 1/2 cup dried cranberries
- 1/2 cup shelled pistachios, chopped
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
- In a large bowl, mix flour, oats, baking powder, baking soda, and salt.
- In another bowl, whisk honey, applesauce, olive oil, egg, and vanilla.
- Combine wet and dry ingredients. Fold in cranberries and pistachios.
- Spoon batter into muffin cups, filling each 3/4 full.
- Bake for 18-20 minutes until golden brown and a toothpick comes out clean.
- Cool for 5 minutes in the pan, then transfer to a wire rack.
Notes
- Store in an airtight container for up to 3 days.
- Freeze muffins for longer storage.
- Substitute honey with maple syrup if preferred.
