Ingredients
- 1 ripe avocado
- 2 slices whole grain bread
- 1 large egg
- 1 tbsp lemon juice
- Salt and pepper to taste
- 1 tsp olive oil
- Pinch of red pepper flakes (optional)
Instructions
- Toast the bread until golden and crisp.
- Cut the avocado in half, remove the pit, and scoop the flesh into a bowl.
- Add lemon juice, salt, and pepper. Mash with a fork until creamy.
- Bring a pot of water to a gentle simmer. Add a splash of vinegar.
- Crack the egg into a small bowl. Swirl the simmering water and gently slide the egg in.
- Poach for 3-4 minutes until the white is set but the yolk is still runny.
- Spread the avocado mixture on the toast.
- Top with the poached egg, drizzle with olive oil, and sprinkle red pepper flakes if desired.
