Ingredients

  • 1 lb lean ground beef
  • 1 cup sliced mushrooms
  • 1 cup uncooked brown rice
  • 2 cups low-sodium beef broth
  • 1/2 cup plain Greek yogurt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 tbsp olive oil


Instructions

  1. Preheat oven to 375°F.
  2. Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned.
  3. Add mushrooms and cook for 3 minutes.
  4. Stir in rice, beef broth, Greek yogurt, garlic powder, onion powder, black pepper, and salt.
