A hearty and healthy one-pot meal with tender beef, mushrooms, and creamy rice.
Ingredients
- 1 lb lean ground beef
- 1 cup sliced mushrooms
- 1 cup uncooked brown rice
- 2 cups low-sodium beef broth
- 1/2 cup plain Greek yogurt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F.
- Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned.
- Add mushrooms and cook for 3 minutes.
- Stir in rice, beef broth, Greek yogurt, garlic powder, onion powder, black pepper, and salt.
- Transfer mixture to a baking dish and cover with foil.
- Bake for 45 minutes or until rice is tender.
- Remove foil and bake for 5 more minutes.
- Let rest for 5 minutes before serving.

- Substitute ground turkey for a leaner option.
