A quick and healthy creamy burrito recipe packed with flavor and nutrients.
Ingredients
- 1 cup cooked brown rice
- 1 can black beans, drained and rinsed
- 1 cup diced bell peppers
- 1/2 cup diced red onion
- 1 avocado, mashed
- 1/4 cup Greek yogurt
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 4 whole wheat tortillas
- Fresh cilantro (optional)
Instructions
- Heat a pan over medium heat and sauté bell peppers and red onion for 3-4 minutes.
- Add black beans, cumin, chili powder, and garlic powder. Stir and cook for 2 more minutes.
- In a bowl, mix mashed avocado and Greek yogurt to make the creamy sauce.
- Warm the tortillas in a dry pan or microwave for 20 seconds.
- Spread the creamy avocado mixture on each tortilla.
- Add the cooked rice and bean-vegetable mixture.
- Roll tightly into burritos and serve immediately.
Notes
- For extra protein, add grilled chicken or tofu.
- Store leftovers in an airtight container for up to 2 days.
- Use lime juice to prevent avocado from browning.
