Description

A healthy alternative to mashed potatoes made with creamy cauliflower.


Ingredients

  • 1 large head cauliflower, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/4 cup milk (or almond milk for dairy-free)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp butter (or vegan butter)


Instructions

  1. Steam cauliflower until tender, about 10 minutes.
  2. Drain excess water and transfer to a food processor.
  3. Add garlic, olive oil, milk, salt, and pepper.
  4. Blend until smooth and creamy.
  5. Stir in butter before serving.

Notes

  • For extra creaminess, add a splash more milk.
