Description
A healthy alternative to mashed potatoes made with creamy cauliflower.
Ingredients
- 1 large head cauliflower, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1/4 cup milk (or almond milk for dairy-free)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp butter (or vegan butter)
Instructions
- Steam cauliflower until tender, about 10 minutes.
- Drain excess water and transfer to a food processor.
- Add garlic, olive oil, milk, salt, and pepper.
- Blend until smooth and creamy.
- Stir in butter before serving.
Notes
- For extra creaminess, add a splash more milk.
- Adjust seasoning to taste.
- Store leftovers in the fridge for up to 3 days.
