Description

A comforting and healthy creamy chicken gnocchi soup made in the crockpot. Perfect for a cozy meal.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 package (16 oz) potato gnocchi
  • 1 cup half-and-half
  • 2 tbsp cornstarch
  • 2 tbsp water
  • 1 cup fresh spinach, chopped


Instructions

  1. Place chicken, carrots, celery, onion, garlic, chicken broth, thyme, rosemary, black pepper, and salt in the crockpot.
  2. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  3. Remove chicken and shred it with two forks. Return to the crockpot.
  4. Add gnocchi and cook on high for 20 minutes.
  5. In a small bowl, mix cornstarch and water. Stir into the soup.
  6. Add half-and-half and spinach. Cook for another 10 minutes.
  7. Serve warm.

  • Use fresh gnocchi for best texture.
