Description
A comforting and healthy creamy chicken gnocchi soup made in the crockpot. Perfect for a cozy meal.
Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 cup diced carrots
- 1 cup diced celery
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1 package (16 oz) potato gnocchi
- 1 cup half-and-half
- 2 tbsp cornstarch
- 2 tbsp water
- 1 cup fresh spinach, chopped
Instructions
- Place chicken, carrots, celery, onion, garlic, chicken broth, thyme, rosemary, black pepper, and salt in the crockpot.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Remove chicken and shred it with two forks. Return to the crockpot.
- Add gnocchi and cook on high for 20 minutes.
- In a small bowl, mix cornstarch and water. Stir into the soup.
- Add half-and-half and spinach. Cook for another 10 minutes.
- Serve warm.
Notes
- Use fresh gnocchi for best texture.
- Adjust seasoning to taste.
- Store leftovers in the fridge for up to 3 days.
