A healthy and creamy crockpot chicken spaghetti recipe that’s easy to prepare and packed with flavor.
Ingredients
- 2 boneless, skinless chicken breasts
- 8 oz whole wheat spaghetti
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup low-sodium chicken broth
- 1/2 cup plain Greek yogurt
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1/2 cup grated Parmesan cheese
- Fresh parsley for garnish
Instructions
- Place chicken breasts in the crockpot.
- Add diced tomatoes, chicken broth, onion, garlic, oregano, basil, salt, and pepper.
- Cover and cook on low for 4-5 hours or high for 2-3 hours.
- Remove chicken and shred it with two forks.
- Return shredded chicken to the crockpot.
- Break spaghetti into thirds and add to the crockpot.
- Stir in Greek yogurt and Parmesan cheese.
- Cover and cook on high for 20-30 minutes until pasta is tender.
- Garnish with fresh parsley before serving.
Notes
- Use whole wheat spaghetti for extra fiber.
- Greek yogurt adds creaminess without heavy cream.
