Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 oz whole wheat spaghetti
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup low-sodium chicken broth
  • 1/2 cup plain Greek yogurt
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley for garnish


Instructions

  1. Place chicken breasts in the crockpot.
  2. Add diced tomatoes, chicken broth, onion, garlic, oregano, basil, salt, and pepper.
  3. Cover and cook on low for 4-5 hours or high for 2-3 hours.
  4. Remove chicken and shred it with two forks.
  5. Return shredded chicken to the crockpot.
  6. Break spaghetti into thirds and add to the crockpot.
  7. Stir in Greek yogurt and Parmesan cheese.
  8. Cover and cook on high for 20-30 minutes until pasta is tender.
  9. Garnish with fresh parsley before serving.
