Description

A smooth and nutritious dip made with edamame, perfect for snacking or as a party appetizer.


Ingredients

  • 2 cups shelled edamame (cooked)
  • 1/4 cup tahini
  • 2 cloves garlic (minced)
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp water (as needed)


Instructions

  1. Add edamame, tahini, garlic, lemon juice, olive oil, salt, and pepper to a food processor.
  2. Blend until smooth, scraping down the sides as needed.
  3. Add water gradually to reach your desired consistency.
  4. Transfer to a bowl and serve with veggies, crackers, or pita bread.

Notes

  • Store in an airtight container in the fridge for up to 3 days.
  • Adjust seasoning to taste.
  • For extra flavor, add a pinch of cumin or smoked paprika.
