Description
A smooth and nutritious dip made with edamame, perfect for snacking or as a party appetizer.
Ingredients
- 2 cups shelled edamame (cooked)
- 1/4 cup tahini
- 2 cloves garlic (minced)
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp water (as needed)
Instructions
- Add edamame, tahini, garlic, lemon juice, olive oil, salt, and pepper to a food processor.
- Blend until smooth, scraping down the sides as needed.
- Add water gradually to reach your desired consistency.
- Transfer to a bowl and serve with veggies, crackers, or pita bread.
Notes
- Store in an airtight container in the fridge for up to 3 days.
- Adjust seasoning to taste.
- For extra flavor, add a pinch of cumin or smoked paprika.
