Description
A delicious and healthy creamy French onion chicken skillet that’s low-carb and packed with flavor. Perfect for a quick weeknight dinner.
Ingredients
- 2 boneless, skinless chicken breasts
- 1 large onion, thinly sliced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 1/2 cup shredded mozzarella cheese
Instructions
- Heat olive oil in a skillet over medium heat.
- Add chicken breasts and cook for 5-6 minutes per side until golden. Remove and set aside.
- In the same skillet, add onions and cook until caramelized, about 8 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and scrape up any browned bits from the pan.
- Stir in heavy cream, thyme, salt, and pepper. Simmer for 3 minutes.
- Return chicken to the skillet and spoon sauce over it.
- Sprinkle mozzarella cheese on top and cover until melted, about 2 minutes.
- Serve hot.
Notes
- Use a non-stick skillet for best results.
- For extra flavor, add a splash of white wine when cooking onions.
- Store leftovers in an airtight container for up to 3 days.
