Description

A delicious and healthy creamy French onion chicken skillet that’s low-carb and packed with flavor. Perfect for a quick weeknight dinner.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 large onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1/2 cup shredded mozzarella cheese


Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add chicken breasts and cook for 5-6 minutes per side until golden. Remove and set aside.
  3. In the same skillet, add onions and cook until caramelized, about 8 minutes.
  4. Add garlic and cook for 1 minute until fragrant.
  5. Pour in chicken broth and scrape up any browned bits from the pan.
  6. Stir in heavy cream, thyme, salt, and pepper. Simmer for 3 minutes.
  7. Return chicken to the skillet and spoon sauce over it.
  8. Sprinkle mozzarella cheese on top and cover until melted, about 2 minutes.
  9. Serve hot.

Notes

  • Use a non-stick skillet for best results.
  • For extra flavor, add a splash of white wine when cooking onions.
  • Store leftovers in an airtight container for up to 3 days.
