A healthy twist on Mexican street corn, this creamy pasta salad combines fresh flavors with a light dressing.
Ingredients
- 2 cups cooked pasta
- 1 cup corn kernels
- 1/4 cup Greek yogurt
- 1 tbsp lime juice
- 1/2 tsp chili powder
- 1/4 cup crumbled feta cheese
- 2 tbsp chopped cilantro
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and let cool.
- In a bowl, mix Greek yogurt, lime juice, chili powder, garlic, salt, and pepper.
- Add pasta, corn, and feta cheese to the bowl. Toss gently.
- Top with chopped cilantro before serving.
