Description

A quick and healthy shrimp pasta with mushrooms in a creamy sauce.


Ingredients

  • 8 oz whole wheat pasta
  • 1 lb shrimp, peeled and deveined
  • 2 cups mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup low-fat milk
  • 1 tbsp flour
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped


Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a pan over medium heat. Add garlic and sauté for 30 seconds.
  3. Add shrimp and cook for 2-3 minutes until pink. Remove from pan.
  4. In the same pan, add mushrooms and sauté until soft.
  5. Whisk flour into milk and pour into the pan. Stir until the sauce thickens.
  6. Add cooked shrimp, pasta, salt, black pepper, and red pepper flakes. Mix well.
  7. Stir in Parmesan cheese and garnish with fresh parsley before serving.

Notes

  • Use gluten-free pasta if needed.
  • Substitute shrimp with chicken for a variation.
  • Add spinach for extra greens.
