Ingredients

  • 1 lb shrimp, peeled and deveined
  • 9 oz cheese tortellini
  • 1 cup Alfredo sauce (light or low-fat)
  • 1/2 cup milk (skim or low-fat)
  • 1 cup spinach, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 1 tbsp olive oil


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook tortellini according to package instructions, then drain.
  3. Heat olive oil in a pan over medium heat and sauté shrimp until pink (3-4 minutes).
