Description
A healthy and creamy pasta salad with southwest flavors.
Ingredients
- 8 oz whole wheat pasta
- 1 cup black beans, rinsed and drained
- 1 cup corn kernels
- 1 red bell pepper, diced
- 1/2 cup Greek yogurt
- 2 tbsp lime juice
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/4 cup cilantro, chopped
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and rinse under cold water.
- In a large bowl, combine black beans, corn, and red bell pepper.
- In a small bowl, whisk Greek yogurt, lime juice, chili powder, and cumin.
- Add cooled pasta to the vegetable mixture.
- Pour dressing over the pasta and toss to coat.
- Stir in cilantro and season with salt and pepper.
- Chill for at least 30 minutes before serving.
Notes
- Use gluten-free pasta if needed.
- Add avocado for extra creaminess.
- Adjust spices to your preference.
