A healthy and creamy pasta salad with southwest flavors.


Ingredients

  • 8 oz whole wheat pasta
  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels
  • 1 red bell pepper, diced
  • 1/2 cup Greek yogurt
  • 2 tbsp lime juice
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste


Instructions

  1. Cook pasta according to package instructions. Drain and rinse under cold water.
  2. In a large bowl, combine black beans, corn, and red bell pepper.
  3. In a small bowl, whisk Greek yogurt, lime juice, chili powder, and cumin.
  4. Add cooled pasta to the vegetable mixture.
  5. Pour dressing over the pasta and toss to coat.
