Ingredients

  • 1/4 tsp black pepper
  • 1 cup cooked quinoa or grain of choice
  • 1/4 cup hummus
  • 1 tbsp tahini
  • 1/2 lemon, juiced
  • 1 tbsp chopped parsley


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss Brussels sprouts with olive oil, salt, and pepper.
  3. Roast for 20-25 minutes until crispy and golden.
  4. Cook quinoa or grain according to package instructions.
  5. Assemble bowl with quinoa, roasted Brussels sprouts, hummus, and tahini.
  6. Drizzle with lemon juice and sprinkle parsley on top.
  7. Serve immediately.
