Ingredients
- 1 cup Brussels sprouts, halved
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cooked quinoa or grain of choice
- 1/4 cup hummus
- 1 tbsp tahini
- 1/2 lemon, juiced
- 1 tbsp chopped parsley
Instructions
- Preheat oven to 400°F (200°C).
- Toss Brussels sprouts with olive oil, salt, and pepper.
- Roast for 20-25 minutes until crispy and golden.
- Cook quinoa or grain according to package instructions.
- Assemble bowl with quinoa, roasted Brussels sprouts, hummus, and tahini.
- Drizzle with lemon juice and sprinkle parsley on top.
- Serve immediately.

- Swap quinoa for brown rice or farro if preferred.
