Description
A healthy and crispy buffalo cauliflower salad topped with vegan blue cheese dressing. Perfect for a light lunch or side dish.
Ingredients
- 1 head cauliflower, cut into florets
- 2 tbsp olive oil
- 1/2 cup buffalo sauce
- 4 cups mixed greens
- 1/2 cup shredded carrots
- 1/4 cup diced celery
- 1/4 cup vegan blue cheese dressing
- 1 tbsp chopped fresh parsley
Instructions
- Preheat oven to 425°F (220°C).
- Toss cauliflower florets with olive oil and spread on a baking sheet.
- Roast for 20 minutes until crispy.
- Toss roasted cauliflower with buffalo sauce.
- Arrange mixed greens, carrots, and celery in a bowl.
- Top with buffalo cauliflower.
- Drizzle with vegan blue cheese dressing.
- Sprinkle with fresh parsley before serving.

- For extra crispiness, roast cauliflower longer.
