Ingredients
- 2 cups mashed potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup corn kernels
- 1/4 cup chopped green onions
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup all-purpose flour
- 1 egg, beaten
- 2 tablespoons olive oil for frying
Instructions
- Mix mashed potatoes, cheddar cheese, corn, green onions, salt, and pepper in a bowl.
- Add flour and beaten egg to the mixture and stir until well combined.
- Heat olive oil in a pan over medium heat.
- Form small patties from the mixture and place them in the pan.
- Cook for 3-4 minutes on each side until golden brown and crispy.
- Remove from the pan and drain on paper towels before serving.
