Ingredients
- 2 large potatoes, boiled and mashed
- 1/2 cup shredded cheddar cheese
- 1/4 cup breadcrumbs
- 1 egg, beaten
- 2 tbsp butter
- 2 cloves garlic, minced
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp chopped parsley
Instructions
- Preheat oven to 375°F (190°C).
- Mix mashed potatoes, cheese, salt, and pepper in a bowl.
- Shape into small balls and dip in beaten egg.
- Coat with breadcrumbs and place on a baking sheet.
- Bake for 20 minutes or until golden brown.
- Melt butter with garlic in a pan and drizzle over the potato bombs.
- Sprinkle with parsley before serving.

- Use freshly grated cheese for better melting.
- Ensure potatoes are fully cooled before shaping.
- For extra crispiness, lightly spray with oil before baking.
