Ingredients
- 4 medium potatoes (washed and halved)
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 4 large eggs
- Fresh parsley (chopped, for garnish)
Instructions
- Preheat oven to 425°F (220°C).
- Boil potatoes in salted water for 10-12 minutes until fork-tender.
- Drain potatoes and place on a baking sheet.
- Gently smash each potato half with a fork or masher.
- Drizzle with olive oil and season with salt, pepper, garlic powder, and paprika.
- Bake for 20-25 minutes until crispy.
- Remove from oven and create small wells in the potatoes.
- Crack eggs into the wells and return to oven for 8-10 minutes until eggs are set.
- Garnish with fresh parsley before serving.
Notes
- Use russet or Yukon Gold potatoes for best results.
- Adjust seasoning to taste.
- For extra crispiness, broil for the last 2-3 minutes.
