Crispy smashed potatoes with garlic and parmesan, a healthy side dish perfect for any meal.


Ingredients

  • 1.5 lbs small potatoes
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/4 cup grated parmesan
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh parsley, chopped


Instructions

  1. Boil potatoes until fork-tender, about 15 minutes.
  2. Drain and let cool slightly.
  3. Place potatoes on a baking sheet and smash them with a fork or glass.
  4. Drizzle with olive oil and sprinkle with salt and pepper.
  5. Bake at 425°F for 25 minutes or until crispy.
  6. Mix minced garlic and parmesan, sprinkle over potatoes.
  7. Bake for another 5 minutes.
  8. Garnish with fresh parsley before serving.
