Crispy smashed potatoes with garlic and parmesan, a healthy side dish perfect for any meal.
Ingredients
- 1.5 lbs small potatoes
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1/4 cup grated parmesan
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp fresh parsley, chopped
Instructions
- Boil potatoes until fork-tender, about 15 minutes.
- Drain and let cool slightly.
- Place potatoes on a baking sheet and smash them with a fork or glass.
- Drizzle with olive oil and sprinkle with salt and pepper.
- Bake at 425°F for 25 minutes or until crispy.
- Mix minced garlic and parmesan, sprinkle over potatoes.
- Bake for another 5 minutes.
- Garnish with fresh parsley before serving.
