Ingredients
- 1 pound purple potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried rosemary
Instructions
- Preheat oven to 425°F (220°C).
- Boil potatoes until tender, about 15 minutes.
- Drain and let cool slightly.
- Place potatoes on a baking sheet and smash them with a fork.
- Drizzle with olive oil and sprinkle with salt, pepper, garlic powder, and rosemary.
- Bake for 25-30 minutes until crispy.
