Description

Quick and healthy zucchini fritters that are crispy on the outside and tender inside. Perfect for a light snack or side dish.


Ingredients

  • 2 medium zucchinis, grated
  • 1/2 teaspoon salt
  • 1/4 cup all-purpose flour
  • 1 egg, beaten
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil for frying


Instructions

  1. Grate the zucchinis and sprinkle with salt. Let sit for 5 minutes, then squeeze out excess water.
  2. In a bowl, mix zucchini, flour, egg, Parmesan, garlic powder, and black pepper.
  3. Heat olive oil in a pan over medium heat.
  4. Scoop tablespoons of the mixture into the pan and flatten slightly.
  5. Cook for 2-3 minutes per side until golden brown and crispy.
  6. Remove and drain on paper towels. Serve warm.
