Description
Quick and healthy zucchini fritters that are crispy on the outside and tender inside. Perfect for a light snack or side dish.
Ingredients
- 2 medium zucchinis, grated
- 1/2 teaspoon salt
- 1/4 cup all-purpose flour
- 1 egg, beaten
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil for frying
Instructions
- Grate the zucchinis and sprinkle with salt. Let sit for 5 minutes, then squeeze out excess water.
- In a bowl, mix zucchini, flour, egg, Parmesan, garlic powder, and black pepper.
- Heat olive oil in a pan over medium heat.
- Scoop tablespoons of the mixture into the pan and flatten slightly.
- Cook for 2-3 minutes per side until golden brown and crispy.
- Remove and drain on paper towels. Serve warm.
Notes
- Use a clean kitchen towel to squeeze out zucchini moisture.
- For extra crispiness, press fritters lightly with a spatula while cooking.
