Description

A hearty and healthy beef pot pie made in a crock pot, perfect for a comforting meal.


Ingredients

  • 1 lb lean beef, cubed
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 tbsp olive oil
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1/2 tsp black pepper
  • 1 cup whole wheat flour
  • 1/2 cup low-fat milk


Instructions

  1. Heat olive oil in a pan and brown the beef cubes.
  2. Add onions and garlic, sauté until soft.
  3. Transfer beef, onions, and garlic to the crock pot.
  4. Add mixed vegetables, beef broth, thyme, rosemary, and black pepper.
  5. Cook on low for 6 hours or high for 3 hours.
  6. Mix flour and milk in a bowl to form a dough.
  7. Roll the dough and place it over the beef mixture in the crock pot.
  8. Cook for an additional 30 minutes until the crust is golden.

Notes

  • You can use frozen vegetables if fresh ones aren’t available.
  • For a thicker filling, add 1 tbsp cornstarch mixed with water.
  • Store leftovers in an airtight container for up to 3 days.
