A hearty and healthy soup made with tender chicken, tomatoes, and Parmesan cheese, slow-cooked to perfection.
Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 can (14.5 oz) diced tomatoes
- 1 cup chopped onions
- 2 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 cup grated Parmesan cheese
- 1/2 cup heavy cream or Greek yogurt
- 1 cup chopped spinach
- Salt and pepper to taste
Instructions
- Place chicken, tomatoes, onions, garlic, and broth in the crock pot.
- Add basil, oregano, salt, and pepper.
- Cook on low for 6 hours or high for 3 hours.
- Shred the chicken with a fork.
- Stir in Parmesan cheese, cream, and spinach.
- Cook for an additional 15 minutes.
- Serve hot.

- Use Greek yogurt for a lighter version.
- Add more vegetables like zucchini or bell peppers if desired.
- Store leftovers in an airtight container for up to 3 days.
