Ingredients

  • 8 oz rice noodles
  • 1 lb chicken breast, sliced
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 tsp sriracha
  • 1/4 cup fresh basil, chopped
  • 1 lime, juiced


Instructions

  1. Place chicken, bell pepper, onion, garlic, and ginger in the crock pot.
  2. Mix soy sauce, fish sauce, brown sugar, and sriracha in a bowl, then pour over the ingredients.
  3. Cook on low for 4 hours or high for 2 hours.
  4. Add rice noodles in the last 30 minutes of cooking.
  5. Stir in fresh basil and lime juice before serving.
