Description

A healthy and delicious crock pot version of Million Dollar Tortellini, packed with flavor and easy to prepare.


Ingredients

  • 1 lb cheese tortellini
  • 1 lb ground turkey
  • 1 can (28 oz) crushed tomatoes
  • 1 can (15 oz) tomato sauce
  • 1 cup low-sodium chicken broth
  • 1 cup chopped spinach
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese


Instructions

  1. Brown the ground turkey in a skillet over medium heat. Drain excess fat.
  2. Add the turkey, tortellini, crushed tomatoes, tomato sauce, chicken broth, spinach, onion, garlic, Italian seasoning, salt, and pepper to the crock pot.
  3. Stir well to combine.
  4. Cover and cook on low for 4-5 hours or on high for 2-3 hours.
  5. Stir in the Parmesan cheese.
  6. Sprinkle mozzarella cheese on top and let it melt before serving.

Notes

  • Use fresh tortellini for best results.
  • Adjust seasoning to taste.
