A hearty and healthy casserole combining pierogies, kielbasa, and vegetables slow-cooked for a flavorful meal.
Ingredients
- 1 lb frozen potato and cheese pierogies
- 1 lb kielbasa, sliced
- 1 onion, diced
- 1 bell pepper, diced
- 2 cups green cabbage, shredded
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup low-sodium chicken broth
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
- 1/4 cup fresh parsley, chopped
Instructions
- Place pierogies, kielbasa, onion, bell pepper, and cabbage in the crock pot.
- Add diced tomatoes, chicken broth, garlic powder, smoked paprika, black pepper, and thyme. Stir gently.
- Cover and cook on low for 4-5 hours or high for 2-3 hours.
- Garnish with fresh parsley before serving.
Notes
- Use turkey kielbasa for a leaner option.
- Add a dollop of sour cream for extra richness.
- Store leftovers in an airtight container for up to 3 days.
