Description

A hearty and healthy casserole combining pierogies, kielbasa, and vegetables slow-cooked for a flavorful meal.


Ingredients

  • 1 lb frozen potato and cheese pierogies
  • 1 lb kielbasa, sliced
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cups green cabbage, shredded
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup low-sodium chicken broth
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/4 cup fresh parsley, chopped


Instructions

  1. Place pierogies, kielbasa, onion, bell pepper, and cabbage in the crock pot.
  2. Add diced tomatoes, chicken broth, garlic powder, smoked paprika, black pepper, and thyme. Stir gently.
  3. Cover and cook on low for 4-5 hours or high for 2-3 hours.
  4. Garnish with fresh parsley before serving.
