Description

A healthy twist on classic mac and cheese made in a crock pot with taco seasoning for extra flavor.


Ingredients

  • 2 cups whole wheat pasta
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 cups low-fat milk
  • 1 tbsp taco seasoning
  • 1/2 cup plain Greek yogurt
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In the crock pot, combine milk, taco seasoning, olive oil, salt, and pepper.
  3. Add cooked pasta and stir well.
  4. Mix in shredded cheeses and Greek yogurt.
  5. Cover and cook on low for 2 hours, stirring occasionally.
  6. Serve warm.
