Description
A healthy twist on classic mac and cheese made in a crock pot with taco seasoning for extra flavor.
Ingredients
- 2 cups whole wheat pasta
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 2 cups low-fat milk
- 1 tbsp taco seasoning
- 1/2 cup plain Greek yogurt
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- In the crock pot, combine milk, taco seasoning, olive oil, salt, and pepper.
- Add cooked pasta and stir well.
- Mix in shredded cheeses and Greek yogurt.
- Cover and cook on low for 2 hours, stirring occasionally.
- Serve warm.
Notes
- Use gluten-free pasta if needed.
- Adjust taco seasoning to taste.
- Store leftovers in an airtight container for up to 3 days.
